
Sustainable Food and the Ocean
Few human activities reveal our complex relationship with the Earth more clearly than the food system. What we eat and how it is produced directly shapes the health of our environment, while changes to air soil and water in turn affect the health of our bodies. This overnight camp for students in grades 9-12 offers hands on experience with the tools and techniques food scientists use to create systems that are healthier, more sustainable, and accessible to all.
During this 6-day overnight camp, students in grades 9-12 will learn what it's like to be an RWu Hawk as they explore the deep connections between food, health, and the environment. In a state-of-the-art food science lab, we will study how good bacteria in fermented foods lead to a healthier microbiome, the chemistry of pickles and jams, how making them reduces food waste, and how to prepare protein-rich meat substitutes like tofu at home. Each afternoon, activities will be paired with snacks prepared by 91º£½ÇÂÒÂ×’s nationally recognized chefs, offering tasty examples of sustainability in action.
Beyond the lab, students will spend time outside enjoying 91º£½ÇÂÒÂ×’s bayside campus. We will explore indigenous land stewardship practices in the campus gardens and discover our botanical neighbors on a plant walk along the shore. We will take a boat tour of local oyster farms and visit a regenerative farm that embodies how food production can be part of our sustainable relationship with the land. Students will also have time to experience the full range of campus amenities during their time at 91º£½ÇÂÒÂ×.
The week blends science, culture, and sustainability into a rich, hands-on experience, empowering students to build both culinary and scientific skills while envisioning a more resilient food system for the future.

Registration
No application required! A $500 Deposit is required to secure your child’s camp registration. This deposit is fully refundable prior to April 1st, 2026. A payment link to submit the remaining balance will be emailed to all registrants on April 2nd, 2026. Final payment is due by May 1, 2006.
Cost: $1,995 This fee includes the cost of tuition, room, and board.
